Turkish Dishes: Red Lentil Kofte

This a vegetable kofte. Most of the kofte are made of minced meat but this one is made of onion, lentil and buhgur.

Red Lentil Kofte



Cooking time:30 minutes
Preparation : 15 minutes

What will you need:
1 big onion
1 cup red lentil
1 table spoon salt
1 table spoon domato paste
6-7 branches of fresh parsle
1/2 cup fine buhlgur
1 cup of hot water
2 table spoon butter


How to prepare:
  1. Toss chopped onion into the buttered pan and let onion cook until it turns pink
  2. Add tomato paste into the mixture and cook for 5 minutes.
  3. In a separate pot, rinsed red lentils should be cooked for about 15 minutes and after turning off the heat, add bhulgur and close the lid of the pot for about10 minutes.
  4. Mix cooked onion,fresh parsley, cooked lentil for 5 minutes then roll mixture to form finger shape kofte.
  5. Serve warm or cold.
