Turkish Dishes: Cig Borek (Raw Pie or Tatar Pie)

I have loved these pies since my childhood. My grandmother used to bake for this for us. My family is originally from Tataristan and immigrated to Bulgaria. Hence the name, "Tartar" Pie.I have always loved Cig Borek pies (as known in Turkish) with yogurt or Ayran. (Ayran is a traditional yogurt milk during summer time.)


Tartar Pie

What will you need:
Minced (lamp)meat 400gr
1 big onion, chopped
1 table spoon salt
1 table spoon Black pepper

For Dough
1 kg flour, all purpose
1 tablespoon, fresh yeast
1 tablespoon salt
and sufficient water to make soft dough which you should allow to rest for about 30 minutes.

How to prepare:
Divide the dough pieces as big as walnut .With rolling pin, shape the dough pieces as round as the size of tea plate. Spread the minced meat mixture on the dough. Form half-circle to close the dough with meat inside. Close the edge.


Fry in a hot non-sticky pan.
