Turkish Dishes: Tarhana Soup

Tarhana soup is probably the most famous soup in Turkish homes. This soup is usually prepared in summer so it can be consumed during winter.  Tarhana is made with yogurt,onion, tomato, red pepper, salt and parsley,flour. All these ingredients are mixed with instant maya then ,with clean cloth , the mixture is covered and allowed to settle until the mixture dries. The dried mixture made powder hand-mad. It is then later stored in glass vase for the winter.

During our vacation in Instanbul, I managed to get Tarhana powder from my mom who prepared the powder last summer.


Tarhana Soup

Here goes the recipe:

What you will need:
6-8 spoon tarhana powder
1 table spoon tomato paste
2 gloves of garlic-shredded
1 cup of olive oil
1 teaspoon salt
5-6 glass of warm water

How to prepare:
Mix tomato paste and garlic in hot olive oil for about 10 minutes. Later add 5 tablespoons of tarhana powder. Slowly add warm water into the pot and at the same time , stir the ingredients in medium heat until it boils. Finally, simmer for about 5 minutes. Let the soup rest 5 more minutes before serving.
You can also add fresh parsley in to the soup.
