Turkish Dishes: Semolina Halvah

Semolina Halvah


Semolina is an Italian word which means wheat. Semolina halvah is one of my favorite dessert. It's perfect with black tea.


What you will need:
2 cups of semolina
1.5 cup sugar (you can go for brown sugar as well for healtier choice
1.5 cups milk
2 table spoon cinnanom
2 cups of water
150 grams butter or olive oil if you prefer a lighter taste
2 table spoon pine nuts (Pine nuts is usually expensive and difficult to find, you can use crashed walnuts as alternative)

For increased flavour, you can also use liquid vanilla and shredded orange shells

How to prepare:
We need to use a deep pot in order to contain the semolina. First, place butter in a hot pot and wait until it melts completely. When melted, add the semolina and pine nuts. Slowly simmer until semolina turns golden color. Add warm water, milk and sugar in to the pot. Close the lid of the pot and let semolina absorb the water and milk.Brew the mixture for ten minutes and let it cook a bit before serving.


Old school way to prepare this is to boil water and milk together and at the same time mix the butter and semolina in a different pot and later mix those boiled water-milk mixture in to the semolina until it  turns blownish.

You can also cover your semolina dish with hot chocolate or different types of nuts in order to give a fancy look to your dish. I prefer pistacho powder topped semolina.
